with special breads, appetizers, water, 1/2 bottle of wine and rum mixed

Entries:

  • Tuna tataki, wasabi and candied ginger
  • Carpaccio of toothfish cheeks, virgin passion fruit sauce
  • Creamy Cilaos lentils, coconut curry and snacked camarons
  • Crumble of candied tomatoes, sautéed mushrooms and peï smoked mozzarella


Dishes :

  • Camaron risotto, lime combava sauce
  • Half breaded duck breast, duchess potatoes in truffle oil, honey port sauce
  • Roasted toothfish in a chorizo ??crust, on a bed of diced butternut sautéed with flaked almonds and whole-grain mustard sauce
  • Fondant lamb, crunchy vegetables and cinnamon butternut puree, guava sauce


Desserts:

  • Pavlova with exotic fruits
  • Raspberry heart chocolate fondant
  • Mille-feuille of almond speculoos and lemon cream with caloupilé
  • Profiteroles with pineapple flambéed in rum and salted butter caramel

Delivered in closed dishes at 7:30 p.m., with plates and cutlery

Entries:

  • Tuna tataki, wasabi and candied ginger
  • Sea bream ceviche: sea bream, shallots, tomatoes, cucumber, ginger, garlic, mint, coriander
  • Goat Cheese-Honey Salad: green salad, Goat Cheese-Honey toasts, sun-dried tomatoes, cured ham chips, mini cucumbers, olive oil, and cider vinegar.

Dishes :

  • Duck tartare with honey, ginger, pink berries, raspberry vinegar and mixed salad
  • Bobun salad with camarons, with rice vermicelli, cucumber, cherry tomatoes, red cabbage, carrots, bean sprouts, roasted peanuts, mint and coriander. Ginger vinaigrette
  • Tabbouleh: cherry tomatoes, mini cucumbers, onions, roasted almonds, parsley, mint, olive oil, lemon vinaigrette

Desserts:

  • Red fruit panacotta
  • Raspberry heart chocolate fondant
  • Creamy lemon-caloupilé meringue
